Spiced Apple Cake


This smells so good when it is in the oven - sweet and cinnamony. The apples makes it  really moist and yummy. There is no need the peel the apples as the pink skins add a bit of colour.

125 g Butter
130 g Sugar
2 Eggs
125 g Plain Flour
3 Apples
1 tsp Baking Powder
1 tsp Mixed Spice
1/2 tsp Cinnamon

1 tbsp Sugar
1/2 tsp Cinnamon

Melt the butter in a saucepan and allow to cool. Wash the apples, quarter them and remove the cores and stalks then slice thinly. Whisk the butter, sugar and eggs until pale and fluffy. Combine the dry ingredients and fold them into the egg mixture. Pour the batter into a greased cake tin, then stick the apple slices into the batter, skin side up. Mix the sugar and cinnamon and sprinkle over the top. Bake for 40 minutes at 175 degrees.
