How to make non Swedish people eat pickled herring




You present it as Swedish Sushi. Dainty mouthfuls that look pretty. The beer and the snaps and the songs all help too of course - you have to make pickled herring eating an event, then it becomes hard to decline at least trying a piece.

Not that our Easter Lunch guest* needed convincing, in fact I had to bring out seconds! Very impressive. After the sill (pickled herring) starter, we enjoyed a smoked salmon and spinach quiche with some steamed green vegetables and a mustard, lemon and dill dressing. Then came the easter cake, but that deserves it's own post.

*We had two guests but one is a vegetarian so he had the perfect excuse!
